This 2016 ZD Napa Valley Cabernet Sauvignon continues to show ZD Wines’ commitment to producing powerful yet balanced wines highlighting the best vineyards in the Napa Valley. This was a milestone vintage for the winery: 100% of the grapes blended in our Napa Valley Cabernet Sauvignon are certified organic.
Each vineyard lot was hand harvested and fermented separately in small stainless steel open-top fermenters. Hand punchdowns during fermentation ensured a gentle extraction of color and tannin. The wines were then barrel aged for ten months in American Oak, after which our first blending trial tastings occurred. Once the final blend was made, the wine was returned to barrel and aged for another 14 months before bottling.
The aroma explodes with ripe cassis, blackberry, plum, and a hint of cedar. The intense dark fruit is complemented by subtle hints of clove, toast, and soft vanilla. The palate is full and round with silky tannins that envelope the intense core of fruit that carries through to an incredibly long finish.
